Clean Eating Almond Crusted Chicken Nuggets with Honey Mustard Sauce


Prep Time: 15 minutes / Cook Time: 10 minutes / Servings: 16 nuggets



Ingredients:

  • 4 boneless, skinless chicken breast tenderloins, cut into 4 pieces each
  • 1/2 cup raw egg 
  • 1 cup crushed almonds
  • 2 tsp. chia seeds
  • 1/2 tsp. garlic powder
  • 1/2 tsp. each salt  
  • 1/4 cup mustard
  • 1/4 cup raw honey

Steps:

  1. Set up two dipping stations:  Pour the eggs into one bowl, and the almonds into another bowl.  
  2. Season the almonds with 1/4 tsp. each of garlic powder, salt.  Stir until combined.
  3. Pat the chicken pieces dry with a paper towel.  Dip each piece of chicken into the eggs and then place it into the almond mix. Cover it with the almond mix, pressing down to coat both sides.  Transfer to a separate dish.  Repeat with all the chicken pieces until they are all coated with the eggs and almond mix.
  4. Cook in the oven at 350 for 30 min.  Allow to cool for about 5 minutes before serving.
  5. For the sauce:  In a mixing bowl combine the mustard, honey, and 1/4 tsp. each of garlic powder, salt and pepper if desired.  Whisk until combined.  Serve with the chicken nuggets.
