Easy and Healthy Slow Cooker Meals

Healthy, slow-carb food should not be hard and stressful to prepare. It
should be light and easy like these healthy crock-pot meals. Despite the simplicity of these dishes, these meals will not only help you lose fat, but are also flavorful and
delightful to the soul. So don’t hesitate to serve your family any of these dishes
on a regular Sunday evening.

I’ve been using my slow cooker a lot lately. I’ve been going on www.pinterest.com, then clipping the recipes to www.ziplist.com, so I have the ingredients handy on my phone when I’m at the grocery store. I’ve also been doing a lot of batch cooking so save time and mess, but I’ll save that for another post.


People seem to think that healthy crackpot meals are boring
and flat. Some also believe that preparing them is time-consuming and
difficult. This kind of thinking is what we are here to change. I want to
share with you healthy crackpot meals that you and your family will surely
love.

First, I want to share with you a healthy chicken
crock-pot meal I call the chicken cacciatore. In Italian, the word cacciatore
refers to a hunter. In a kitchen setting, this word simply describes a meal
prepared “hunter-style” with onions, mushrooms, herbs, tomatoes, bell pepper
and sometime wine. So, in preparing this dish, I need three pounds of skinless
bone-in chicken thighs, 14 ounce of diced tomatoes with Italian seasoning, six
ounce of canned tomato paste, half a cup of chicken both. To add more flavor to
the dish, bring in some sliced onions, three cloves of minced garlic, and
chopped bell peppers. To complete the dish, I need one-fourth cup of dry red
wine. Don’t forget the salt and pepper to season it.


As soon as you get every ingredient on the kitchen
table, simply place all these ingredients in a 3-4 quart slow cooker. Then
cover and cook the chicken on low heat for 6-8 hours. It’s as simple as that.
You can serve this with hot cooked pasta or rice on your day off or with a side salad to stay within the slow-carb diet.
One of the healthy crock-pot meals that you’ll
surely find flavorful is the slow cooker pork roast and vegetables. This dish
is a collaboration of pork sirloin roast with vegetables seasoned with all
spice and apple butter.
For this easy-to-make and healthy crock-pot meal, I started tonight’s dinner by mincing 4 cloves of garlic and chopping two small onions, one very large carrot, and a stalk of celery.  I put them all in the slow cooker and stirred them together. I had some white beans in the freezer that had been cooked in pork stock.  I thawed them in the microwave and then stirred them in too.  (They measured about 3 cups.) The pork shoulder roast was still slightly frozen but since meat actually cooks more quickly than vegetables do in a slow cooker, I knew it would be completely cooked by suppertime.  I salted it generously all over and then set it, fat side up, on top of the vegetable and bean mixture.  I sprinkled it with some fresh rosemary. I put the lid on the cooker, set it on “high,” and let it cook for 5-1/2 hours.  I transferred the roast to a cutting board and removed most of the rosemary leaves.  I stripped the fat and skin from the meat and set them aside for later use. There was quite a lot of liquid in the bottom of the slow cooker so I drained the vegetables and beans in a sieve and then set the liquid aside for soup. (That’s where most of the protein is from the beans). To serve dinner, I put the vegetables and beans in the center of a large platter.  I cut the pork roast from the bones and placed it on top of the ragout, with the browned side up.  We sliced and plated the roast at the table.  It was a lovely presentation and made dinner feel like a special occasion.
Now, I have two lovely healthy crock-pot meals that
would certainly change the way you look at healthy foods. If you are thinking
of what to serve on a Sunday night, do away with the regular two-minute meals
that you could prepare with your microwave. Give your family a chance of
experiencing these heavenly yet healthy crock-pot meals.
