I had a party one summer in Vancouver and the catering company made these fancy appetizers. It was a lobster mousse on an edible cracker shaped like a spoon garnished with asparagus. They were delicious and beautifully impressive. I researched the crackers and they sell for $100/box! A bit pricey I thought, (mind you, you do get almost 200 in a box) so I wanted to put the recipe up here for you, in case you’d like to create them for your next party, or maybe impress your friends at the next potluck you go to.
- 1 1/2 (14.1-oz.) package pre-made pie crusts
- 1 egg white, beaten
- 3/4 teaspoon seasoned salt
- Parchment paper
- Roll out the dough and either cut around the stencil or use a cookie cutter.
- Bake according the package instructions.
- Makes about 20 spoon crackers
stencil. If you’d prefer to use a cookie cutter you could buy one here.
Here is the recipe for the lobster mousse if you’re interested. Lobster Mousse Recipe
This appetizer would be on your cheat day of course!
what are the egg whites and salt for?
The egg whites are to hold them together and the salt is for flavor.
