Healthy, Easy & Delicious Egg Muffins

My Mom was getting so bored of breakfast when she was on the 4 Hour Body Diet, it made me think of different things she could eat to change it up a little. This Healthy, Easy & Delicious Egg Muffins recipe was one of the many I came up with and will be sharing them all with you. This is a great recipe to make in big batches as the muffins will keep for a couple of days in the fridge or freeze them them heat them up in the microwave as a grab-and-go option. Bite into this recipe and you’ll find hidden layers of hearty spinach, cheese and salty bacon. You can’t taste the zucchini but knowing it’s in there makes you feel like you’re doing your body good!

My toddler also finds this to be a delicious and filling breakfast, and although he is always excited about eggs; he is never excited about vegetables and this is an awesome way to sneak them in where he can’t pick them out. Ha!

Let’s talk about baaaaaacon! When I buy it, I always make sure it is free of sulfites but I just learned that it’s a natural occurring preservative that only some people may be allergic to. I like my food to be preservative free overall but after reading about sulfites, maybe they’re not so bad after all? I would love to hear what you think in the comments below. Here’s a little info on what sulfites are. I like to cook the whole package of bacon once I open it and add it to things over the following 2-3 days. It’s great in salads, “pasta”, and adds flavor to everything, so why not? It’s pretty high in fat, so a little goes a long way, and I don’t buy it all the time. If you are on the 4 hour body diet, you can eat it throughout the week, but again, it’s like the nuts, and hummus, eat it sparingly.

I can say that I have a major love affair with my food processor. I really do use that thing a lot. It just makes things soooooooo much quicker and easier. Especially for grating cheese, zucchini, beats, etc. I do my best to enjoy every moment of my life, but find it extremely challenging to do so when I’m grating cheese by hand for some reason, and when I use the food processor, it’s like a little thrill and amazement every time I can grate an entire cheese block in seconds flat! It doesn’t take much to amuse me, I know. 

I have to give a shout out to my Mom for starting this obsession with this precious gift you bought me when I was 19 and moving out on my own. I used that baby until the lid got stuck and for the life of me (and 20 other people I asked to try) could not remove. It lasted a good 18 years though!

If you’re smart about anything, you’re going to make these Healthy, Easy & Delicious Egg Muffins for yourself and die in cheesy bacon-y heaven. As soon as you bite into these hot little health wonders once they are cooked, you will see the cheese peeking out saying “hello”. That’s why I like to to not only fold in the cheese but also put some of it on top of each muffin.

HEALTHY, EASY & DELICIOUS EGG MUFFINS

Ingredients
  1. 6 smoked bacon rashers or medallions cooked and chopped
  2. Handfull of baby spinach, chopped
  3. 8 medium eggs
  4. 1 tsp garlic powder
  5. Vine ripened tomatoes (or sun-dried) chopped
  6. ½ cup shredded cheddar cheese
  7. ½ cup shredded zucchini
  8. Salt and pepper to taste
Instructions
  1. Grease a muffin tin and preheat the oven to 350 degrees.
  2. Cut the bacon into pieces and place about 1/2 of a slice in the bottom of the muffin tray.
  3. Meanwhile crack the eggs into a bowl and beat your eggs with garlic powder, salt and pepper.
  4. Add the vegetables, and half of the cheese and stir the mixture slightly to combine your eggs with the ingredients.
  5. Pour the egg mixture on top of the bacon and then add the rest of the cheese on top.
  6. The omelettes will puff up a little when you bake them, so make sure to leave just a tiny bit of space at the top of each tin.
  7. Bake in the oven for 20 minutes or until you can poke the centers with a knife and it comes out clean (or almost clean).

    • 4HourBodyGirl You can use a little, but it’s recommended in the 4Hour Body to not eat cheese to achieve results faster. I ate a little these here and there and still lost 10 pounds in 30 days.
