5Min. Healthy, Low Carb Chicken Dinner

Don’t feel like cooking sometimes, or, just don’t have time? I have a solution that is inexpensive too….only about $3/serving! What?!!! Here is a Healthy, Low Carb Chicken Dinner in 5 min. Yes, that right! Only 5 MIN.!!!!!  

I went to Costco yesterday with my 1.5 year old and his friend that I look after every day after daycare. We had a good ‘ol time eating all of the samples while gathering what we needed for the month, and while we were there, I picked up everything that I needed to make this 5 Min. meal. Here’s what you need…..But first a bad joke….Costco announced plans to open its first retail stores in India and China. Tags on clothes and stickers on items will read, “Made Here.” Hardy har har… okay, enough of that…what you need is listed below….

You can get a roast chicken from any grocery store pretty much, but I find the best deal at Costco. Take as much of this as you want, I recommend the size of the palm of your hand, and add it to a plate. I chopped up about 5 pieces for my toddler too, and added it to a small bowl for him at the same time.

I bag or box of preached spinach. Grab a handful and put it beside the chicken on a plate. I chopped some up and threw it in my sons bowl on top of his chicken.

I usually grab 2 at costco every time I go because I put spinach in everything. My smoothies, soups, eggs, and use it in place of lettuce. I find it lasts longer than a spring mix and is more versatile. Earthbound Organics is my favorite.

Open a can of organic black beans, and rinse them of. Add a handful or as many as you want on top of the spinach. I also, sprinkled some of these in my sons bowl, then sprinkled a little garlic powder and chilli powder for additional flavor.

I topped my sons with a little shredded cheese and stuck his in the microwave for 30 sec. while I set the table and got him into his high chair. DONE! A 5Min. Healthy, Low Carb Chicken Dinner for me and my son, that tasted delicious!
