It’s Friday and it’s a beautiful, sunny day! The weekend is calling for sunny weather which I am really looking forward to…Wooohooo! I was looking though my photos from my trip to Italy and was inspired to write this post, create and share some of my favorite 4 Healthy & Quick Summer Recipes.
Aaaaaaaahhhhhhhhh, P-O-S-I-T-A-N-O Such a magical, and beautiful town. Kind of like a dream.
We stayed at quaint little hotel, and it was perfect. We took this funicular down the side of the mountain to this covered patio tucked in to the side of the mountain where we sipped Aperol Spritz (now my favorite summer drink) If you’ve never had one, it’s a little bitter and sweet but mostly refreshing. We watched one of the crew dive into the water to catch our fish right after we ordered it. I don’t think you could get any fresher than that! “Fungulo!” He points them out in the photo below…
Besides the pizza from Chez Blacks, this Linguini Ala Vongole was my favorite dish of the entire trip.
I think I died and went to heaven when this pizza touched my lips. I couldn’t recreate this unless I flew in the water, flour, tomatoes, mozzarella and basil from Italy and maybe built my own pizza oven in my house, so I can only link to a recipe I found that may or may not be close to what I experienced with this pizza. I did find a pizza restaurant in Vancouver called Nicli Antica pizzeria. They did build a forno oven and create the best, most authentic “Italian” pizza I have ever found outside of Italy.

Here I am with the chefs at a restaurant I kept going back to in Sorrento. They really went over the top with their service and the value of the dishes. It was an experience more than anything else.
So this would never be something I’d be all that inclined to come up with on my own, but lucky for me (and you!), I went to Italy and experienced this incredible combination of goodness to share with you. Say whaaaat? I was in shock and awe at the deliciousness of seafood platter and decided to recreate it and give you the recipe here. Fresh Italian Seafood Platter With Fried Stuffed Zucchini Blossoms
Oh, and um, let’s not forget this Buffala Mozzarella antipasto plate!

We headed back to Rome. I know most people would be happy about that, but I am the few people who actually does not like Rome. I know I’ll probably hear about that in your comments from You Rome-Lovers, go ahead, tell me what I should like about it. Compared to the Amalfi Coast, or other cities, it’s my least favorite city in the world. Of course, I always manage to make the best of my moments so I did find some interesting things…
One cool thing my friends and I did, was that we went to a live concert that was performed inside the colosseum. I went with my ex and my friend Angela Molineux who has earned her the title, “The Wild Soprano”. She said the concert we went to had incredible acoustics being held in the colosseum. Kinda cool!
